After being diagnosed with young onset Parkinson’s disease at the age of 41, I took matters into my own hands, and decided that as a nurse, I knew medications were not going to change the course of my disease progression. Knowing that many medications simply mask symptoms, the only other alternative I had was food. The quote by Hippocrates, “let food be thy medicine and medicine be thy food,” became my mantra. I quickly discovered a few pioneers in the field of neuro protection, some with Parkinson’s disease, and others being physicians.
I tried the ketogenic diet, which I still currently maintain, as well as intermittent fasting. What I did not anticipate, was a breath knowledge in regards to this way of eating. I learned how the ketogenic diet and low-carb way of eating has helped people with a myriad of other disease states ranging from diabetes and obesity, to polycystic ovarian syndrome, and I have used this information to help others. The purpose of my website, http//:NotJustKeto.net is essentially a journey of my culinary adventures to help me document my discoveries, hopefully inspiring other people to take control of their health, and to show that low carb food is not only healthy, but I can taste amazing.
